4-5 fresh tomatoes diced
1 onion
1 garlic clove crushed
2 spoons of coconut sugar
3 Cardamom Pods
Chilli powder or fresh chilli to taste
1/4 tsp of cinnamon
1/2 tsp cumin powder
1/4 cup water
1tbsp apple cider vinegar
1 1/2 cans white beans cooked
1. Gently fry onion in a little olive oil and sea salt, add garlic and spices, toast until fragrant
2. Add the remaining ingredients, cover and simmer for 5-10mins
3. Remove lid and continue cooking until the tomatoes break down and sauce thickens around the beans. Taste and adjust seasoning if needed.
Serve on a high protein bread or mountain bread
